16 Healthy Summer Produce Recipes

I can’t believe the weekend is here already. I was a day off all week. Tuesday was Wednesday, Wednesday was Thursday…you get it. Now that it is Friday, I’ve finally straightened my brain out and realized what day it actually is.

Last month I put together a list of 16 Healthy Summer Produce Recipes for the Diet-to-Go blog. There are some delicious foods to try while summer produce is still at its peak.
SummerProduceI suggest making the Peach and Blue Cheese Salad, Edamame Succotash and Raspberry-Orange Sunrises. Those are my favorites from this list. My new house is only three blocks from downtown, where every Thursday there is a large farmer’s market. This sets me up for the perfect opportunity to buy fresh food without excuses.

Dairy-Free Diet Substitutions

The word ‘diet’ sounds frightening because it means some food restrictions or limitations and changes in your usual way of life. When most people hear the word diet, they think about slimming down, keeping fit and reducing calories. However, a dairy free diet has nothing to do with weight loss. The reason is inability of a digestive system to cope with lactose (sugar). All animal milks contain it. So a person suffering dairy intolerance or allergy has to avoid products containing milk to prevent health problems.

Can you imagine your childhood without ice-cream or your morning without a cup of awakening coffee with milk? And what about chocolate that sweetens any bitter moment of our lives? It seems that it’s harder to stick to dairy free diet than to reduce calories. But this is a wrong impression. Nowadays there is a big variety of products replacing dairy ones.

**Certainly dairy free chocolate is the best food invention highly appreciated by vegetarians and candy lovers who avoid dairy products. Such chocolate contains no butter, milk or lactose. So it still gives pleasure and does no harm to your health.

**Milk is high in calcium that is essential for our bones, teeth, muscles and heart. Plant-based milk is a good alternative. Rice, almond, soya, oat, hemp, coconut and even potato have come to help those of us suffering dairy intolerance and allergy. Vegetable milks are rich in health properties of the plants they are made from. It is interesting to know that you can get enough calcium by eating broccoli, whole grains, beans, nuts.

**It may happen that a person can be very sensitive to cow’s milk and at the same time can be tolerant to milk of other animals. In this case sheep, goat or buffalo milk as well as cheese and cream made from them will be great substitutes to enrich your daily ration. Make sure that you can drink these kinds of milk before you stock up

**Butter can be replaced with dairy free margarine, or you could use coconut butter (here’s how to make your own). Feel free to use coconut, soybean, olive and canola oil in cooking and baking.

**Yogurt’s benefits make us include it in our daily ration. It is a mere digestion saver and supplier of probiotics for our gut. And again plants are here to replace this wonderful product. You can choose either soy or coconut yogurts with different flavours.

Dairy intolerance or allergy will not necessarily change your usual way of life, or make you forget about your favorite dishes. Quite the opposite, you have a chance to broaden your gastronomic experience and feel new taste of ordinary products.

The Good and Bad of Being an Adult

No one tells you what being an adult is truly like.
It is equal parts amazing and horrible in my book. Maybe slightly more amazing, but there are so many ‘must do’ items that make your personal world go round.

There are things that are necessary in life, such as dishes, laundry, taxes, showering, planning, driving, daydreaming, working, budgeting, computering, shopping and the list goes on and on and on. There are so many things that I would rather not do (see most of last sentence), but have to do because being an adult means doing things that you don’t want to do.

But, everyone has necessities in a more positive way. These types of necessities make the dull, adult ones tolerable. Vacations, new cars, alcohol, tattoos, candy and cupcakes whenever you want (yup, necessity), I get to set my own bedtime and freedom to set my schedule and allow to as much lazy couch time as I want.

One of my least favorite things (EVER) is shaving. Thankfully, winter in Ohio means pants, which means that no one ever sees my legs. Let me rephrase that, I love having smooth legs, but I hate the physical act of shaving and the time suck that it is. I have actually checked out laser hair removal in Michigan and Ohio (I live right at the border). Clarkston Dermatology located in Clarkston, Mich., offers laser tattoo removal, laser hair removal and wrinkle reduction. I only know one person who has had this done, but I would love to make this happen. I would rather go to a dermatology office than other types of offices to get these types of services done.

Another thing I hate taking care of as an adult is my car. Between gas, oil changes, brakes, insurance and car repairs, the car likes to devour my money. Don’t even get me started on taking care of the house…there are so many days where I wish I was still renting. The exterior top of our chimney is slowly rotting and dripping water into my closet. This sounds ideal, right?

This is where being an adult and budgeting comes into play. How do I pay for the chimney and still have money for all of the vacations and cupcakes I want?
Again, no one tells you what being an adult is really like. There are days where I wish I was 12 again but there are days where I wouldn’t trade 33 for anything.

I was thinking over the weekend about how badly I want a massage. The last time I had a massage was when I bought Jeff a gift certificate to a local massage therapist and he handed it right back to me.
